Made this for lunch yesterday, it hit the spot!
This Quinoa dish with pears, strawberries, blackberries, and dried cranberries in a lemon sugar "sauce" is a great spring or summer time snack or light meal! I made too much so guess what I'm having for lunch today!
One cup Quinoa
Fruit of choice (I used strawberries, blackberries, a pear and dried cranberries)
Half teaspoon Sugar (more or less as desired)
Cook quinoa per package directions, let it cool for about half hour
In the meantime, cut up the fruit
Prepare the "sauce" : squeeze juice of one lemon (about a tablespoon or two depending on preference) add sugar and stir until combined.
Once quinoa has cooled, add fruit and "sauce" and stir until combined..
Nutrition Note: Quinoa is a grain that is high in fiber and protein. It can be a great substitute for rice or pasta as a side.
